Pancakes

Ingredients:
- 2 cups wholemeal flour
- 2 tablespoons butter
- 1 teaspoon baking powder
- 1 cup milk
- 1 teaspoon vinegar or lemon juice
- 2 tablespoons caster sugar
- 2 eggs
Equipment:
- Frying pan
Method:
- Combine milk and vinegar in a small container and let sit.
- Sift flour into mixing bowl with baking powder and sugar
- Crack eggs into bowl and mix lightly.
- Melt butter in microwave and stir into the mixture.
- Gradually add the milk until you get the desired consistency, you may need more or less milk depending on how dry the flour is.
- Beat well until mixture is smooth and uniform.
- Preheat frying pan with a small amount of butter, add a small amount of batter to check the heat, if it's not right the first pancake is usually a failure.
- Continue pouring batter into frypan with around 3 tablespoons of mixture per pancake and cook for around 30 seconds on each side, depending on the mix, you may or may not get bubbles to let you know when to turn them.
