Nachos

Ingredients:

  • 1 Onion
  • 10 cloves Garlic
  • 4 large Tomatoes
  • 4 Jalapeno Peppers
  • 2 Red Capsicums
  • 2 cans Refried Black Beans
  • Mozzarella Cheese
  • Unsalted Corn Chips
  • Salt & Pepper

Method:

  1. Dice onion into small pieces, place into preheated oiled pan, cook until it starts to turn brown, turn heat to low.
  2. Chop garlic, jalapeno chillies into small pieces and add to pan, stirring well.
  3. Dice tomato into small cubes and add to pan.
  4. Slice capsicums in half and place into preheated 200 degrees oven drizzled with oil, take out when skin has schrivelled but not dry.
  5. Dice capsicums into cubes similar to tomatoes and add to pan.
  6. Increase heat, stir until boiling, reduce heat and simmer, add a decent amount of pepper and a sprinkle of salt.
  7. Open beans and add to pan, stirring well.
  8. Let simmer for 5 more minutes then turn off heat.
  9. Place a serving of the mixture at the bottom of a deep plate, sprinkle a little of cheese on top.
  10. Place one layer of cornchips on top and sprinkle a little more cheese.
  11. Continue spreading layers of chips interweaving them.
  12. Place a final layer of cheese on top, crack some pepper on top and place into a pre heated oven (180 degrees).
  13. Wait until the cheese goes brown on top and remove from oven, serve with optional fork.
