Lentil Soup

Ingredients:
- 1 Large Onion
- 2 Tablespoons Olive Oil
- 3 Carrots
- 2 Stalks Celery
- 6 Cloves Garlic
- 1 Tablespoon Oregano
- 2 Bay Leaves
- 1 Tablespoon Basil
- 1 Can Crushed Tomatoes
- 1 Cup Red Lentils
- 1 Cup Green Lentils
- 1 Whole Green Chilli
- 8 Cups Water
- 2 Tablespoons Vinegar
- Salt
- Black Pepper
Method:
- Slice onions, carrots and celery into evenly sized pieces.
- Heat oil in a large pot, add vegetables and stir until onion is tender.
- Chop garlic, oregano, basil and chilli finely and add to pot, stirring for 2 minutes.
- Stir in lentils, water and tomatoes.
- Bring to a boil and simmer for 1 hour.
- Add vinegar and season with salt and pepper to taste.
