Lentil Soup

Ingredients:

  • 1 Large Onion
  • 2 Tablespoons Olive Oil
  • 3 Carrots
  • 2 Stalks Celery
  • 6 Cloves Garlic
  • 1 Tablespoon Oregano
  • 2 Bay Leaves
  • 1 Tablespoon Basil
  • 1 Can Crushed Tomatoes
  • 1 Cup Red Lentils
  • 1 Cup Green Lentils
  • 1 Whole Green Chilli
  • 8 Cups Water
  • 2 Tablespoons Vinegar
  • Salt
  • Black Pepper

Method:

  1. Slice onions, carrots and celery into evenly sized pieces.
  2. Heat oil in a large pot, add vegetables and stir until onion is tender.
  3. Chop garlic, oregano, basil and chilli finely and add to pot, stirring for 2 minutes.
  4. Stir in lentils, water and tomatoes.
  5. Bring to a boil and simmer for 1 hour.
  6. Add vinegar and season with salt and pepper to taste.
