Gingerbread

Ingredients:

  • 5 cups Wholemeal Flour
  • 1 cup Brown Sugar
  • 1 teaspoon Baking Powder
  • 1 cup Melted Copha
  • 1 cup Golden Syrup
  • 1 Egg
  • 1/2 teaspoon Nutmeg Powder
  • 1 teaspoon Cinnamon Powder
  • 4 teaspoons Ginger Powder
  • 1/2 teaspoon Cayenne Pepper
  • 1 teaspoon Salt

Method:

  1. Melt copha in saucepan over low heat.
  2. Add sugar and golden syrup and mix well dissolving the sugar.
  3. Sift the flour, baking powder, salt and all the spices into a mixing bowl.
  4. Gradually add 4 cups of the dry ingredients in to the copha mix.
  5. Add egg and mix thoroughly.
  6. Turn mixture onto a suitable surface and knead in the remaining flour by hand.
  7. Allow to cool for 15 mins then wrap in baking paper and chill for 1 hour.
  8. Roll each ball out into a 1/2 centimetre sheet on baking paper and cut as needed.
  9. Cook for 8 minutes or until brown in a 190 degree oven.
