Gingerbread

Ingredients:
- 5 cups Wholemeal Flour
- 1 cup Brown Sugar
- 1 teaspoon Baking Powder
- 1 cup Melted Copha
- 1 cup Golden Syrup
- 1 Egg
- 1/2 teaspoon Nutmeg Powder
- 1 teaspoon Cinnamon Powder
- 4 teaspoons Ginger Powder
- 1/2 teaspoon Cayenne Pepper
- 1 teaspoon Salt
Method:
- Melt copha in saucepan over low heat.
- Add sugar and golden syrup and mix well dissolving the sugar.
- Sift the flour, baking powder, salt and all the spices into a mixing bowl.
- Gradually add 4 cups of the dry ingredients in to the copha mix.
- Add egg and mix thoroughly.
- Turn mixture onto a suitable surface and knead in the remaining flour by hand.
- Allow to cool for 15 mins then wrap in baking paper and chill for 1 hour.
- Roll each ball out into a 1/2 centimetre sheet on baking paper and cut as needed.
- Cook for 8 minutes or until brown in a 190 degree oven.
