Anzac Biscuits

Ingredients:

  • 2 cups Wholemeal Flour
  • 1 & 1/2 cups Brown Sugar
  • 2 cups Oats
  • 2 cups Desiccated Coconut
  • 250g Unsalted Butter
  • 1/2 cup Golden Syrup
  • 1 teaspoon Bicarb Soda
  • 1 tablespoon Boiling Water

Method:

  1. Preheat oven to 180 degrees celsius.
  2. Sift flour into bowl then add brown sugar, oats and coconut, making a well in the center.
  3. Add butter to small pan with golden syrup, stir over low heat until butter has melted and mixture is smooth.
  4. Remove from heat, combine bicarb soda with boiling water in cup and stir, add immediately to butter mixture, stirring quickly as it caramelises.
  5. Add to dry ingredients and mix with wooden spoon until well combined.
  6. Roll 2-3 tablespoons of mixture into a ball and place on an oven tray (covered with baking paper) then flatten gently with hand.
  7. Cook until golden brown, around 12 minutes, biscuits will still be soft when they are pulled out.
  8. Transfer to wire rack to cool after a few minutes.
