Anzac Biscuits

Ingredients:
- 2 cups Wholemeal Flour
- 1 & 1/2 cups Brown Sugar
- 2 cups Oats
- 2 cups Desiccated Coconut
- 250g Unsalted Butter
- 1/2 cup Golden Syrup
- 1 teaspoon Bicarb Soda
- 1 tablespoon Boiling Water
Method:
- Preheat oven to 180 degrees celsius.
- Sift flour into bowl then add brown sugar, oats and coconut, making a well in the center.
- Add butter to small pan with golden syrup, stir over low heat until butter has melted and mixture is smooth.
- Remove from heat, combine bicarb soda with boiling water in cup and stir, add immediately to butter mixture, stirring quickly as it caramelises.
- Add to dry ingredients and mix with wooden spoon until well combined.
- Roll 2-3 tablespoons of mixture into a ball and place on an oven tray (covered with baking paper) then flatten gently with hand.
- Cook until golden brown, around 12 minutes, biscuits will still be soft when they are pulled out.
- Transfer to wire rack to cool after a few minutes.
